After being opened, shredded coconut lasts around six months in the cupboard. If it has been opened, it can last up to eight months in the refrigerator and one year in the freezer. Shredded coconut that hasn’t been opened can be stored for up to a year in the pantry, refrigerator, or freezer.
Shredded coconut keeps well in the pantry with other baking ingredients when kept at room temperature. While an opened box of shredded coconut can be kept in the pantry, it lasts the longest when kept in the refrigerator. Chocolate, custard, apricots, oranges, pineapples, and seafood all go nicely with shredded coconut. It’s also wonderful on a variety of baked items.
